This is one of those totally satisfying, hearty, comforting meals for cool or cold weather. Easy to make and complete in one pot, it's something I make when there's not a lot of time to cook. And doesn't "hunky dory" mean completely satisfying? —inpatskitchen

What You'll Need

Ingredients
  • 1 large onion, chopped
  • 3 tablespoonsbutter
  • 1/2 of a medium cabbage chopped in large pieces
  • 5 medium potatoes, peeled and halved
  • 1 teaspoonsweet Hungarian paprika
  • 1 cupwater
  • 1 1/2 pounds kielbasa, cut in 2 to 3 inch pieces
  • 2 to 4 tablespoonsred wine vinegar, depending on your taste for tart
  • Salt and pepper to taste
Directions
  1. In a large skillet with a cover, saute the onion in the butter until the onion begins to soften.
  2. Add the cabbage, potatoes, paprika, water and a little salt and pepper to taste.
  3. Cover and simmer for about 5 minutes until the cabbage begins to wilt.
  4. Add the kielbasa, cover and simmer for another 15 minutes until the potatoes are fork tender.
  5. Stir in the red wine vinegar and simmer another minute or two. Salt and pepper to taste and serve!

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining.My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!

Ohhhh myyyy.. when ever I see kielbasa it brings back childhood memories!! I already printed this out!! I am Hungarian and seeing kielbasa and Hungarian Paprika in a recipe makes me go bonkers hehehee Fall has arrived and even if it didn't.. I'd be making this dish! Can't wait till tomorrow so I can go food shopping... oh and a one pot meal to boot.. what more can you ask for!! yummmmy!!! I can smell it now!! Thank you so much for sharing!!

Thank YOU AnnieNJ! Sometimes I add even more paprika ! My mom at Thanksgiving would make sauerkraut, onions, paprika and turkey drippings and broth..saute it up and bake it...I still do it as part of Thanksgiving tradition, but cut some of the sauerkraut with fresh cabbage...I'm Bulgarian and Macedonian...it must be an Eastern European thing!

Oh yes!! I've added a little sauerkraut to this in the past when I have it.. Absent the sauerkraut, the red wine vinegar compensates. I hope you liked your husband's version!
