Fresh jalapeno,onions, cilantro and tomatoes roughly chopped. Add a little olive oil and fresh lime juice. Crudo meaning not cooked.

The pork shoulders at Wegman's were huge; I bought boneless country style ribs instead, choosing a pkg w/ a little fat left on the meat. I cut the ribs in strips across the grain, as one would w/ flank steak. Otherwise I followed the recipe pretty closely. Marinated the meat for about 10 hours. Served w/ black beans, pico de gallo, guacamole and fat free Greek yogurt (instead of sour cream or crema). This was quick & easy. Looking forward to cooking the pork on the grill this summer.

I also used boneless country-style ribs, as another reviewer did, and it worked splendidly. They marinated for about three hours. I served them with blistered poblanos, caramelized onions and a corn and cilantro salsa/relish. Fresh avocado and feta, pico de gallo as well. A really spectacular taco dinner.

Both of us loved this. I let it it sit in the fridge for a couple of days with the seasoning because something had come up, and the meat was super tender. Will definitely make it again...:-)

This was good. Liked it a lot. Quick and easy. Spices on pork delicious. Tomatillo salsa was watery, would wait to add water until tomatillos exuded their liquid before adding water.

I substituted all oil with olive oil, froze the garlic (makes it spread easier,) made a Crude salsa (used red Onion) and a Black Bean and Mango Salad (Black Bean, Mango, Onion, Cilantro, Lime juice, Apple cider vinegar, Cumin, olive oil, salt and orange bell peppers). I made a Refresco de Pina (Coconut Juice and fresh pineapple blended and served over ice) which brought it all together. It took about 25 minutes to put this meal together (eat your heart our Rachel Ray :-P). Lots of Great Color.

Making the Tomatillo salsa is a big bonus for this dish. For Salsa cruda I used the best homemade I could but in the grocery--but going to the trouble of making the Tomatillo salsa was well worth it; see note below about not adding water till tomatoes gives up their internal water by cooking. Also, I marinated these for two days and thought they were especially tender and flavorful, which is always challenge with pork shoulder.

Made this using pork loin which I marinated in the pork rub for 48 hours after using a wet brine. The result was incredibly tender pork with wonderful flavour. I'll definitely be making this again.

Try ancho chili or even chipotle chili depending on how much heat you can take. Chipotles add a lovely smokiness but they can be spicy.

Pork shoulder should be cooked in strips. This is done in order to get the full flavor of the seasoning on the most surface area possible.

I thought about this myself, since pork loin is more readily available in grocery stores. I'd marinate 1-3 hours, since I think the marinade breaks down the fibers of the pork, and pork tenderloin has so little fiber to begin with. It might turn out mush. Better to breakdown a pork cut with more fat and fibers like shoulder and use more marinade time, which also allows the flavor to bind deeply into the meat.

I cooked this on the grill rather than inside on a pan. It is a keeper for my family. I also made both salsas (added lime juice to both) and they went over well too. Sliced pork shoulder is becoming one of my favorite things to cook on the grill.

This was tasty, and the marinade was quite good. Next time I will add green pepper slices when I cook the meat. A better way to heat up tortillas is to wrap five of them in aluminum foil and heat them in a 350-degree oven for 10-15 minutes. You can do multiple stacks. Using this method, all your tortillas are ready at the same time and you do not have to keep them warm inside a cloth towel, which really does not work because they do stay warm. This is easier than the stove-top method.

Delicious! Also used country style ribs since it's the same cut as shoulder, but you're not stuck with a whole shoulder roast. Was skeptical that it would be tender after just pan sautéing, but after 4 hours marinating, it was. The seasoning is very flavorful.

good quick meal made with salsa and yogurt - crema mix. Added corn to salsa. Serano chili added zest. Had pork tenderloin. Worked well

Easy, simple and good! It's joy to have a quick recipe for pork shoulder. Our burritos were scrumptious. Would use maybe twice the garlic and half again as much spice next time--and there will be a next time!

WOW! These are fabulous. Really great seasoning and much better than anything similar found at a Mexican restaurant. As several suggested used country style pork ribs for ease of prep. Marinated for 6 hours. Used soft taco shells which were a personal preference however I'm sure corn shells are just as good. Also used my own homemade salsa. No radishes as I'm no fan of them. Absolutely love this recipe. Thanks Mr. Tanis!

Delicious!! I also used some as a rub for bone in pork chops and it was delicious—little extra salt on the meat helped too! (Next time I’ll skip chipotle pepper completely—too spicy for me). Will definitely make again!

I was terminally bored with my own cooking and then happened upon this. I looked for boneless ribs but could only find pork steak. Chopped it, marinated it and cooked it on the grill with a veggie basket. Easy and a nice addition to summer grilling.

I’ve made this several times and it’s always amazing. I buy pork shoulder steaks, freeze them for 30 minutes to make them easy to slice very thinly, then put them in the marinade. So good!

this has become a favorite in my house. I don't do cilantro as it tastes like soap. I add a bit of paprika and Corriander to the toasting spices. Simply served with chopped onions and fresh avocado and lime juice so delish! thank you!!!

So so so good. I cubed the meat and did the marinade at lunch time so it sat in the fridge until it was ready to cook. Prep took no time at all. I bought tomatillo salsa from Fresh Direct instead of making from scratch. Also served with shredded cabbage and a bit of avocado. Next time I might try pickling the radishes per one other commenter's suggestion!
